# Step-by-Step Instructions:
01 - Bring a medium pot of water to a boil. Add ramen noodles and cook according to package instructions without seasoning packets. Drain noodles, reserving 60 ml of cooking water, then set aside.
02 - In a mixing bowl, whisk together eggs, grated Parmesan, heavy cream, and black pepper until smooth.
03 - Heat a large skillet over medium heat. Add diced bacon or pancetta and cook until crispy. Remove from skillet, leaving 15 ml of rendered fat in the pan. If omitting meat, add butter instead.
04 - Add unsalted butter and minced garlic to the skillet. Sauté for 30 seconds until fragrant.
05 - Add cooked noodles to the skillet and toss thoroughly to coat in garlic butter.
06 - Remove skillet from heat. Immediately pour in egg and cheese mixture, tossing quickly to evenly coat noodles and form a creamy sauce. Add reserved cooking water a tablespoon at a time if sauce needs loosening.
07 - Fold in crispy bacon or pancetta if used. Season with salt to taste.
08 - Plate immediately, garnishing with additional Parmesan cheese and chopped fresh parsley as desired.
